Asian Chicken Eggplant Stir Fry

1. Heat one tablespoon of peanut oil on a large non-stick frying pan using only medium heat. Then add one peeled and diced small eggplant along with one coarsely chopped yellow onion and one red and one yellow pepper both seeded and cut into julienne. Sauté the ingredients for eight minutes then transfer the mixture into a bowl. Cover the bowl to prevent the mixture from getting cold.
2. Use medium-high heat to heat one tablespoon of extra virgin olive oil into the pan. Then put into the pan two tablespoons of dried basil, two tablespoons of chopped fresh orange mint or peppermint, and one tablespoon of peeled and chopped ginger. Keep stirring for one minute. Add a quarter cop of organic chicken broth and stir for another minute. Add one pound of skinless and boneless chicken breast strips and stir fry for two minutes. Put in two tablespoons of low sodium soy sauce. Then add another two quarters of organic chicken broth. Get the eggplant mixture and pour it into the pan and sauté for three minutes. Add two tablespoons of Stir Fry Spice Blend and stir fry for a minute and then serve immediately.
